if itunes is starting and stopping play randomly, the issue may be a loose connection between headphone/mic cable or an issue with the headphone plug itself. osX detects the disconnect and reconnection and causes itunes to start and stop irrespective of whether itunes was running in the first place.

troubleshooting - start stop problems
